Starting with a cold maceration to give roudness and then a long fermentation at 32°C to extract the essential tannins whilst conserving the suppleness.
- Ageing
The Cabernet is aged in oak barrels (a third French oak and two thirds American oak) for twelve months to refine the tannins and to bring a note of oak to the flavour as to accompany the force of this wine.
