GRAPE : Semillon, Rolle.
SOIL : Clay – Chalk/Limestone.
CLIMATE : Mediterranean.
YIELD : 50 hl / hectare.
HARVEST : Manual and selected.
VINIFICATION : Firstly cold maceration fermentation for 20 hours, then fermentation for 40% in new barrels.
AGEING : Aged on lees for five months before bottling.

The liveliness of the aromas and spontaneity in the mouth gives this wine the qualities of a “Grand Vin” ideal with all fish dishes or white meat.
This wine is best appreciated within the first few years, after a couple of years it will take some notes of butter and becoming smoother.
