Starting with a cold maceration to give roundness and then a long fermentation at 32°C to extract the essential tannins whilst conserving the suppleness. The two varieties are vinified separately.
The Cabernet Sauvignon is aged in oak barrels during twelve months to refine the tannins and to bring a note of oak to the flavour.
