L'EXCEPTION - Red 2006
Vin de pays des Coteaux du Verdon

GRAPE : Cabernet Sauvignon, Merlot.
SOIL : Clay – Chalk/Limestone - Schist.
CLIMATE : Mediterranean.
YIELD : 35 hl / hectare.
HARVEST : Manual and selected.
VINIFICATION : Starting with a cold maceration to give roundness and then a long fermentation at 32°C to extract the essential tannins whilst conserving the suppleness. The two varieties are vinified separately.
AGEING : 45% of the Cabernet is aged in oak barrels (a third new) during twelve months to refine the tannins and to bring a note of oak to the flavour.
 

Tasting

A red wine full of pleasure that will captivate you with its charm and strength. To be served at room temperature with red meats such as a Daube Provençal.

Evolution

Can be consummed from today and for the next eight years.
