L'EXCEPTION² - Red 2007
Vin de pays des Coteaux du Verdon

GRAPE : Cabernet Sauvignon.                           SOIL : Clay – Chalk/Limestone.
CLIMATE : Mediterranean.
YIELD : 35 hl / hectare.
HARVEST : Manual and selected.
VINIFICATION : Starting with a cold maceration to give roudness and then a long fermentation at 32°C to extract the essential tannins whilst conserving the suppleness.

AGEING : The Cabernet is aged in oak barrels (a third French oak and two thirds American oak) for twelve months to refine the tannins and to bring a note of oak to the flavour as to accompany the force of this wine.

Tasting

Exception² with its strengh and warmth is the ultimate of Chateau Thuerry. Its fruit, volume, structure, persistence and balance make this wine one of excellence. To be served at temperature ambient with meat dishes or just for a moment of absolute pleasure.

Evolution

As from today this wine can be appreciated and for the next 8 years to come.
