GRAPE : Sémillon, Clairette, Ugni Blanc, Rolle.
SOIL : Clay – Chalk/Limestone - Schist.
CLIMATE : Mediterranean.
YIELD : 55 hl / hectare.
HARVEST : Manual and selected.
VINIFICATION : Maceration at low temperature to privilege extraction of the aromas and volume without the bitterness.
AGEING : Aged on lees during four months before bottling.
 

Tasting

A dry white wine with a structure combining strength, vivacity and fineness, with a complex bouquet of white flowers. Ideal with fish or white meats.

Evolution

To be consumed during its youthful years to appreciate the freshness. To be drunk between 10 and 12°C
