SOIL : Clay – Chalk/Limestone.
CLIMATE : Mediterranean.
YIELD : 35 hl / hectare.
HARVEST : Manual and selected.
VINIFICATION : Kept in vats during a long period with maceration after fermentation at high temperature to extract the tannins.
AGEING : One part in vats to ensure a balanced assemblage, the remaining in oak barrels, 55/45.
