GRAPE : Rolle, Sémillon.
SOIL : Clay – Chalk/Limestone.
CLIMATE : Mediterranean.
YIELD : 40 hl / hectare.
HARVEST : Manual and selected.
VINIFICATION : Firstly cold maceration fermentation for eight hours, then fermentation with temperature controlled.
AGEING : Aged on lees for five months before bottling.

A dry white wine with a structure combining strength, vivacity and fineness, with a complex bouquet of white flowers. To be drunk between 10 and 12°C, ideal with fish or white meats.
To be consumed during its youthful years to appreciate the freshness.
